Anti-aging Asparagus + Antioxidant Benefits For Skin

Asparagus is a "fountain of youth" skin food sourced from the earth, these sprouts are harvested harvested at the perfect peak time before being left to grow into a small tree and becoming inedible. Asparagus Juice

I enjoy juicing my asparagus either alone as a shot sized skin booster or blended into a full juice recipe:

Forever Young Juice

  • 1 pineapple

  • 1/2 cucumber (or whole small cucumber)

  • 1/2 bunch of asparagus

  • Fresh mint leaves (I use a handful)

  • 1 inch of ginger

Asparagus also pairs well as a roasted or steamed side dish (love mine with lots of garlic), or consumed raw in salad recipes.

Asparagus Potato Soup

Ingredients:

2 large potatoes

1 bunch of asparagus 

4 garlic gloves 

1 small onion

¼ tsp poultry seasoning

1 ½ tsp onion powder

1 tsp garlic powder 

Fresh chives 

Sea salt & pepper to taste (optional)

To serve:

Fresh chives or dill

Chili pepper flakes (optional)

Instructions:

Wash, peel, chop onion, garlic, potato and asparagus. Don't worry about making them look perfect because this recipe is pureed.

Add onion and garlic into a pot with 2 tablespoons of filtered water (adding more as needed to avoid sticking). If using, add some sea salt as your onions and garlic become fragrant.

Add your chopped potato and asparagus to the pot and cover with enough filtered water to fill the pot and cover your ingredients completely. 

Add onion powder, garlic powder, poultry seasoning, chives, and more sea salt and pepper to taste if using.

Bring to a boil and reduce heat to simmer on medium low for 20 to 30 minutes. Make sure potatoes are soft and cooked through before transferring into a blender, or using am immersion blender to create a puree.

Serve with fresh herbs like chives or dill and optional chili flakes.
